Baby Blue™ – The Little Lobster with Big Ambitions

Norwegian Lobster Farm started delivering the world’s first farmed portion-sized lobster back in 2008 – an exclusive delicacy that has received outstanding reviews from some of the world’s most renowned restaurants. Now, the company has developed yet another unique lobster product: BabyBlue™. With its distinctive size of 100–120 g, exceptional meat quality, and sustainable farming methods, Baby Blue™ is more than just an ingredient—it’s a new way to enjoy lobster. And this is just the beginning.

First in the World – and First to Succeed

Norwegian Lobster Farm is a pioneer in land-based lobster farming. As the world’s first company to commercially produce portion-sized farmed lobsters in various sizes, they have proven that it is possible to combine innovation with premium seafood that is in high demand in the international market.

Baby Blue™ is a lobster in a league of its own. It is smaller than the legal minimum size for wild-caught lobster, making it a unique niche product. Since it has not reached sexual maturity, the meat quality offers an outstanding texture and flavor that top chefs know how to fully utilize. When served in restaurants, nothing goes to waste – the shell is turned into chips and dip or used for stock in soups, bisques, or even as a garnish for desserts. This makes Baby Blue™ a true ‘no waste’ product that fits perfectly into today’s sustainable food trends. With a growing demand for premium seafood in the global market, Norwegian Lobster Farm is well-positioned for export and further expansion.

Lobster Bonanza – An Evening of Culinary Experiences
In February, Norwegian Lobster Farm hosted an exclusive 8-course Baby Blue™ Bonanza. Led by Arne Nese from Ekte Matglede, the lobster was prepared in eight different ways. Throughout the evening, guests not only experienced the unique taste of Baby Blue™ but also learned about the company’s inspiring journey – a 25-year adventure filled with challenges, innovation, and the upcoming establishment of the world’s first land-based lobster farming facility.

Rogaland Havbrukspark – A Hub for Developing and Commercializing New Marine Species
In recent years, Norwegian Lobster Farm has been based at Rogaland Aquaculture Park, a key hub for growth and innovation in land-based farming of emerging marine species. With a new website on the way and a state-of-the-art demonstration kitchen under development, the park is paving the way for further expansion. Entrepreneurs and industry players can access modern plug-and-play facilities with running seawater, meeting spaces, and a strong network of aquapreneurs and researchers.

A Unique Position and an Exciting Future
Today, Norwegian Lobster Farm is the only company in the world engaged in commercial lobster farming. With a unique product, proprietary technology, and zero direct competition, they hold a strong position in the market. Future plans include increasing production to 30 tons by 2026 and, in the long run, scaling further based on their well-proven technology.

To provide a closer look at the work behind Baby Blue™, Norwegian Lobster Farm shares exciting and informative videos on its social media channels. Through short and engaging films on Facebook, LinkedIn, Instagram, and TikTok, you can follow the efforts and processes behind the world’s first portion-sized lobster. So far, five episodes have been published, and one has already reached 11,000 views on TikTok. Stay tuned for exclusive insights into the future of lobster farming!
